Ingredients

1 lb Cubed Salmon (Skin Removed)

1 tsp Olive Oil

3 tsp Salt

½ tsp Pepper

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Paprika

1 tsp Cajun Seasoning

Lime Juice

1 cup Rice

13 ½ oz fl Coconut Milk

3 tbsp Greek Yogurt

2 cloves Garlic

Jalapeno

Black Beans (Optional)

Corn Salsa (Optional)

Directions

Step 1

Cube salmon and place in a bowl.

1 lb Cubed Salmon (Skin Removed)

Step 2

Marinate with 1 tbsp olive oil, 1 tsp each of salt, garlic powder, onion powder, paprika, Cajun seasoning, and juice of 1 lime.

Lime Juice

Step 3

Boil 1 can of coconut milk, 1 cup rice, 1 tsp salt and lime juice. Simmer covered for 20 minutes.

Step 4

Air fry marinated salmon for 12-15 mins at 390ºF.

Step 5

For crema, blend 3 tbsp Greek yogurt, jalapeño, 2 garlic cloves, 1 tsp salt, and lime juice.

Step 6

Assemble bowl: coconut rice, salmon, black beans, corn salsa, and lime crema on top.
